Pork Verde // FOR: Tacos OR Bowls

Can it be called a "family favorite" if Daddy Bret only likes it, but it isn't HIS favorite, but everyone else's??

- umm... I don't know about that...

- What I do know is that this is Bret Annalese's favorite!

I make it for a meal prep when I go out of town or if it's her birthday or if I'm just wanting her to feel her mama's love through food.

(FACT:  FOOD  IS  A  LOVE  LANGUAGE.)

Some extra love that I have for this particular recipe is how many OTHER dinners I can roll out of it from the stock sauce:
(CLICK  RECIPE  TITLE  FOR  LINK:)
So remember to save the sauce!!
I usually freeze it in measured 4 cup increments.
From experience I recommend that you OMIT most, if not ALL, of the salt from the recipes you use it in.

AN  ADDITIONAL  NOTE:
adapted from:  "Our Best Bites" cookbook.
"adapted" because I absolutely take a lazy route on this recipe these days.

INGREDIENTS  FOR  PORK  AND  EVENTUAL  STOCK:

(NOTE:  ingredients are separated into sections for when/what gets cooked and/or added)

2-3  TABLESPOONS olive oil
1  onion, large and diced
2  pounds pork tenderloin, cubed

2 1/2  teaspoons Kosher salt
1  teaspoon coarse black pepper
1  bundle of garlic, minced

2  jars, mild or medium, green salsa

1/2  bunch of cilantro, washed, chopped
4  cups chicken broth
2-3  TABLESPOONS sugar
2  teaspoons cumin

Start with a large pot or stockpot, heat olive oil on a medium/high heat.

Add olive oil.

Add onion.  Cook and stir for a 5-8 minutes.

Add cubed port tenderloin.

Add salt and pepper.

Cook and stir until meat is cooked through and onions start to caramelize a bit.

Add minced garlic.

Cook until fragrant.

Add jars of green (verde) salsa.

In a blender combine, blend, mix up the cilantro, broth, cumin, sugar.

Add blended ingredients to the stockpot with everything else.

Simmer low (this is not a boil...) uncovered for 30-60 minutes.

Stir very frequently or you will scorch your pork.

REMINDERS!!
- save your stock for enchiladas or BBQ chicken chili
- store any leftover meat WITH stock for easy re-heating on the stovetop
